The cities of Bergamo, Brescia, Cremona and Mantova have always interwined their histories, being united by their extraordinary artistic and naturalistic heritage, composed by ancient villages and fascinating natural parks.
The great culinary tradition is one of the pillars of the so-called “East Lombardy”.
It’s exactly from one of these long family traditions that our Taleggio cheese DOP Fonduta borns. Produced only with cow’s whole milk of the Val Taleggio, this cheese is processed accurately by the hand of skillful dairyman, transforming it in an intense and aromatic flavoured cream, perfect to enrich one of the ingredients at the heart of the most emblematic dishes of Lombardy: the corn flour.
Stone milled as it used to be, the red corn flour is an old type of maize whose corncob is characterized by a particular reddish colour, which is also passed down to the flour and therefore to the corn flour based dishes. Rich in nutritional properties and taste, if combined with the refined butter with truffles, it creates a perfect combination full of traditions and the “savoir faire” handed down from father to son by the producers that for many years, everyday, have brought forth with passion their products.
Like the Taleggio cheese DOP Fonduta and the red corn flour, our butter with truffle can also boast a remarkable craftmanship. Produced only with high quality cow’s milk, the butter is masterly mixed with the unique taste of the summer truffles, creating an exceptional and refined ingredient.
The traditions, the history, and the passion of the producers make Bergamo, Brescia, Cremona and Mantova the guardians of a significant culinary heritage, made of a craftmanship to be discovered and lived.
“East Lombardy” is one of the regions which has founded the “ERG – European Region of Gastronomy” international project, aiming to promote the local area, the economical and social differencies and the extraordinary culinary culture of its partecipant members. Every year, in order to promote these goals, ERG bestows to some of their members the award of “European Region of Gastronomy” according to sustainability and innovation criteria. East Lombardy (composed by Bergamo, Brescia, Cremona and Mantova) has been bestowed with the coveted award in 2017.
